Pleasant Ridge Reserve is a artisan farmstead cheese produced by Uplands Cheese in southwest Wisconsin. This cheese is made in the alpine cheese style, similar to a Gruyere (Switzerland). This cheese is only produced during the summer months, May to October, when the cows have access to fresh grasses. There are two versions reserve and extra reserve (aged longer). The cheese tastes similar to a Gruyere, but is nuttier because it comes in a smaller wheel. Another great cheese from Wisconsin.
